Tommaso Rubino, a firm believer in Salento’s potential, acquired in the 1980’s four separate estates to demonstrate the diversity of the region.
Jaddico, Marmorelle, Uggio and Punta Aquila stretch from the Adriatic coast to the hinterland of Brindisi. Tommaso’s goal was to show Salento wine at it’s very best and through the diverse range that his family now offer, made from local varietals like the fascinating Susamaniello and more well known ones such as Primitivo, they are well on their way.
From the Uggio Santa Teresa estate vines in Brindisi. Planted in 2000 at 100 metres above sea level. Spurred cordon trained, 6000 vines per hectare and a yield of 80kg per ha.
Stainless steel fermentation for 10 days, macerated for 15 days at a controlled temperature and malolactic fermentation.
No oak treatment
This is a wine that perfectly expresses this varietal. Plum, blackberry and ripe cherry aromas, with a round taste and smooth tannins, which give body and overall pleasantness. Velvety soft tannins and a full structure.
Those who enjoy pairing their food with red wine have found the perfect match. By varying its temperature it is versatile enough to go well with first courses as well as main courses, cheeses and cold cuts
