VITICULTURE

The Tajinaste Winery emerged in 1977 as a generational changeover to a wine-growing tradition of the García Farráis family. The vineyards are included in the Denomination of Origin Valle de La Orotava. The oldest strains, of the Listán Negro and Listán Blanco varieties, were planted around 1914, with a unique conduction system called “Multiple braided cord”. For several years the winery has been working on the cultivation of autochthonous varieties in simple cordon and Royat, which will soon give fruit to new projects.

Faithfully representing the trilogy: soil, variety and elaboration, a compendium of characteristic sensations has been achieved, which give great personality to our vinifications. Preserving its family origin, they work with the utmost respect for the vineyard, trying to merge viticultural tradition and modern oenology, thus achieving a great typicality in the wines, this being the factor that unites and stands out. The Tajinaste Winery has more than a hundred awards in its history that prove the love and good work with which they make their wines.

WINEMAKING
Driving system: 40% in multiple braided cord (characteristic of the region) and 60% in trellis with Royat cord formation.
Manual harvest: Using small boxes of 15 kg, in order to guarantee that the grapes arrive in the best conditions at the winery.
Harvest time: From September 10 to October 24, 2015
Elaboration: Cold pre-fermentation maceration for 4 days.
Total maceration time: 12 days.
Fermentation time: 7 days.
Type of fermentation: Alcoholic in stainless steel tanks.
Malolactic: In stainless steel tanks.
Fermentation temperature: 28º C.
Aging: 30% of the wine was aged in American oak barrels for two months.

TASTING NOTE
Dark cherry color with violet rims. Clean and pleasant, the aromas of berries stand out on the nose. Blueberries, cherries, plums, along with certain balsamic memories. In the gustatory phase, it is smooth, with the structure of good young reds.
FOOD MATCHING
Pairing. Serve at 14 to 15ºC. An ideal wine to accompany sausages and meats such as veal or pork. Excellent with stir-fries and “tapas” of a certain consistency. A light red to enjoy good charcuterie and dry cheeses. Interesting harmony with fish in marine sauces.
