VITICULTURE

The Tajinaste Winery emerged in 1977 as a generational changeover to a wine-growing tradition of the García Farráis family. The vineyards are included in the Denomination of Origin Valle de La Orotava. The oldest strains, of the Listán Negro and Listán Blanco varieties, were planted around 1914, with a unique conduction system called “Multiple braided cord”. For several years the winery has been working on the cultivation of autochthonous varieties in simple cordon and Royat, which will soon give fruit to new projects.

Faithfully representing the trilogy: soil, variety and elaboration, a compendium of characteristic sensations has been achieved, which give great personality to our vinifications. Preserving its family origin, they work with the utmost respect for the vineyard, trying to merge viticultural tradition and modern oenology, thus achieving a great typicality in the wines, this being the factor that unites and stands out. The Tajinaste Winery has more than a hundred awards in its history that prove the love and good work with which they make their wines.

WINEMAKING
Driving system: 100% multiple braided cord (characteristic of the region).
Manual harvest: using small boxes of 15 kg, in order to guarantee that the grapes arrive in the best conditions at the winery.
Harvest season: From September 20 to October 2, 2015.
Elaboration: Pre-fermentation cold maceration for 12 hours.
Settling: 19 hours at 6º C.
Fermentation time: 8 days.
Type of fermentation: Alcoholic: In stainless steel tanks and 15% in new French and American oak barrels.
Malolactic: Does not perform.
Fermentation temperature: 18º C.
Aging: 20% of the wine was aged in French and American oak barrels for two months.

TASTING NOTE
Light straw yellow in color, wrapped in greenish reflections. The nose reveals the typicality of the Listán blanco. On a slightly smoked background, pleasant floral notes and aromas of pineapple, apple, fennel, forest stand out … In the taste phase it is fresh and smooth, with a well-balanced acidity. Pairing: Serve around 7 or 8 ° C.
FOOD MATCHING
Ideal to accompany fish, rice, shellfish or simply with nuts.
