This wine has been made with Garnacha grapes planted in the “Rambla del Peligrés” plot. Hence it takes its name to show us the most Mediterranean side of the Garnacha.
Manually harvested in small boxes, 50% whole bunches in small concrete vats, 50% destemmed but not crushed. Spontaneous fermentation with native yeasts occurs in concrete on the skins and stems at room temperature. Lightly pressed and aged in concrete tanks for a further 5 months before being bottled unfined, unfiltered, and zero SO2.
The nose suggests summer pudding with a hint of kirsch and the palate is sweet and juicy with some good herbal definitions and rounded tannins.
Pairs well with red meat, game and rich pasta dishes
